Concerns are growing as public figures like Robert F. Kennedy Jr., a nominee for the U.S. Department of Health and Human Services, continue to endorse raw milk. However, medical professionals emphasize that any potential health benefits of raw milk do not outweigh its significant risks.

Raw milk is unpasteurized milk that has not undergone the heating process designed to kill harmful bacteria and pathogens. According to the U.S. Food and Drug Administration (FDA), raw milk can contain disease-causing microbes like E. coli, Salmonella, Listeria, and Brucella.

Despite the risks, raw milk continues to attract a niche consumer base who believe in its supposed health benefits. Many enthusiasts claim they prefer raw milk for its taste, texture, and “natural” state. To mitigate the spread of H5N1, the U.S. Department of Agriculture (USDA) has announced plans to expand testing of raw milk stored in dairy silos across the country. This decision follows the discovery of bird flu in raw dairy samples from Raw Farm, a Fresno-based company that paused distribution after positive test results.

Additionally, two cases of bird flu in cats that consumed raw milk have further heightened concerns about transmission risks.

The pasteurization process, developed by Louis Pasteur, involves heating milk to at least 161°F for 15 seconds to eliminate harmful bacteria. Historically, diseases like bovine tuberculosis, typhoid, and scarlet fever were significantly reduced through widespread pasteurization. Despite the FDA estimating that less than 1% of Americans drink raw milk, its popularity is rising. Psychologists suggest that marketing, nostalgia, and social influence play a role in consumer decisions to purchase raw dairy.

While H5N1 bird flu primarily affects poultry and dairy cattle, experts warn that infected cows shed high viral loads in their milk. The CDC has confirmed 58 human cases of bird flu this year, with 32 reported in California. Many of these cases have been linked to farm workers exposed to sick animals.

Although human-to-human transmission of bird flu has not yet been confirmed, health professionals remain concerned about future mutations of the virus. Symptoms of H5N1 infection in humans include fever, sore throat, runny nose, cough, diarrhea, body aches, and fatigue.

Texas Agriculture Commissioner Sid Miller recently stated, “There’s nothing more American than the freedom to choose what kind of food you eat.” However, health officials stress that public safety should take priority over personal preference.
